Eight Layer Casserole

Eight Layer Casserole
3 C. dried medium noodles
1 lb. ground beef
2 - 8 oz. cans tomato sauce
1 tsp. dried basil, crushed
1/2 tsp. sugar
1/2 tsp. garlic powder
1/4 tsp. salt
1/4 tsp. pepper
8 oz. sour cream
8 oz. cream cheese, softened
1/2 C. milk
1/3 C. chopped onion
10 oz. pkg. frozen chopped spinach, cooked & well drained
1 C. shredded cheddar cheese

Can use a 13 x 9 pan for this - but if you have something slightly smaller that would be better.

Cook noodles - drain and set aside.

In a large skillet - brown ground beef.  Drain any fat.  Stir in the tomato sauce, basil, sugar, garlic powder, salt & pepper.  Bring to a boil then reduce heat.  Simmer uncovered for 5 minutes.

In a medium bowl beat the cream cheese & sour cream together with an electric mixer on medium speed til smooth.  Stir in milk and onion.  

Layer in your baking dish -
half the noodles;
half the meat/sauce mixture;
half the cream cheese mixture;
all the spinach;
rest of the meat/sauce mixture
rest of the noodles;
rest of the cream cheese mixture.

Cover with aluminum foil that has been coated with Pam (or something similar).  Bake at 350 degrees for 45 minutes.  Sprinkle with cheddar cheese and bake, uncovered, for about 10 more minutes.  Let stand for 5 minutes before serving.
